Add Tomatoes and Seasoning
Pour in the crushed tomatoes, and add oregano, basil, salt, black pepper, and sugar. Stir well to combine.

Simmer the Sauce
Reduce the heat to low and let the sauce simmer for about 20 minutes, stirring occasionally.

Finish the Sauce
Stir in the chopped fresh parsley just before serving and remove from heat.
Prepare the Calamari

Clean the Calamari
If using whole calamari, clean and cut them into rings. Rinse under cold water and pat dry with paper towels.

In a bowl, mix the all-purpose flour, cornstarch, salt, black pepper, and cayenne pepper.

Heat the Oil
In a deep skillet or frying pan, heat 2 cups of vegetable oil over medium-high heat until it reaches 375°F (190°C).

Coat the Calamari
Dip the calamari rings first into the egg mixture and then coat them in the flour mixture, shaking off the excess.

Fry the Calamari
Carefully add the coated calamari rings to the hot oil in batches, being careful not to overcrowd the pan. Fry for about 2-3 minutes or until golden brown and crispy.
