Main Ingredients

Method

Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 425°F (220°C).

  2. 2

    Prepare the Potatoes

Wash the Russet potatoes thoroughly under cold water. Pat them dry with a paper towel. Using a fork, poke several holes in each potato to allow steam to escape during baking.

  3. 3

    Bake the Potatoes

Place the potatoes directly on the oven rack or on a baking sheet. Bake for 45-60 minutes, or until the skins are crispy and a fork easily pierces the flesh.

  4. 4

    Cook the Bacon

While the potatoes are baking, cook the bacon in a skillet over medium heat until crispy. Remove the bacon and drain on paper towels. Once cooled, crumble the bacon into small pieces.

  5. 5

    Grate the Cheddar Cheese

Grate the cheddar cheese and set aside.

  6. 6

    Prepare Chives

Chop the chives finely and set aside.

Assembly

  1. 7

    Slice and Fill Potatoes

Once the potatoes are baked, remove them from the oven and let them cool for a few minutes. Carefully slice each potato lengthwise without cutting all the way through. Gently squeeze the ends to open them up.

  2. 8

    Add Butter and Seasoning

Add 1 tablespoon of butter to each potato, allowing it to melt. Season with salt and black pepper to taste.

  3. 9

    Top with Cheese and Bacon

Sprinkle a generous amount of grated cheddar cheese over each potato and top with crumbled bacon.

  4. 10

    Add Sour Cream and Chives

Finish by adding a dollop of sour cream on top of each potato and sprinkle with chopped chives.
