Preparing Falafel Mixture

Soak the Chickpeas
Place dried chickpeas in a bowl and cover with water. Let them soak overnight (8-12 hours).

Mix in Flour
Transfer the mixture to a bowl and stir in flour. Mix until combined. If the mixture is too wet, add more flour, one tablespoon at a time.

Chill the Mixture
Cover the bowl with plastic wrap and refrigerate for at least 1 hour to allow flavors to meld.
Frying Falafel

Heat Oil
In a deep pot or fryer, heat vegetable oil to 350°F (175°C).

Form Balls
Using wet hands, form the chilled falafel mixture into balls or patties, about the size of a golf ball.

Fry the Falafel
Carefully drop the falafel balls into the hot oil, a few at a time. Fry until golden brown, about 3-4 minutes per side. Remove and drain on paper towels.
