Dough Preparation

Activate Yeast
In a small bowl, combine warm water, sugar, and active dry yeast. Stir gently and let it sit for about 5-10 minutes until frothy.

Mix Ingredients
In a large mixing bowl, whisk together the all-purpose flour and salt. Create a well in the center and add the activated yeast mixture and olive oil.

Knead Dough
Mix until a dough forms, then transfer it to a floured surface. Knead for about 8-10 minutes until smooth and elastic.

First Rise
Place the kneaded dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1-2 hours or until doubled in size.

Preheat Oven
Preheat your oven to 475°F (245°C) and place a baking stone or an inverted baking sheet inside to heat up.

Shape Pitas
Once the dough has risen, punch it down and divide it into 8 equal pieces. Roll each piece into a ball and then flatten it into a disc about 1/4 inch thick.

Bake Pitas
Carefully place the discs onto the hot baking stone or sheet. Bake for about 5-7 minutes or until they puff up and begin to brown slightly.

Cool Pitas
Remove the pitas from the oven and cover them with a clean towel to keep them soft as they cool.
Serving

Serve with Hummus and Olives
Once the pita bread is cool, cut them in half or serve whole, accompanied by a cup of hummus and a cup of olives.
