    Preheat the Oven

    Preheat your oven to 350°F (175°C).

    Prepare the Nut Filling

    In a food processor, combine walnuts, almonds, sugar, and ground cinnamon. Pulse until finely chopped but not a paste. Set aside.

    Melt the Butter

    In a small saucepan, melt the unsalted butter over low heat. Once melted, remove from heat and let cool slightly.

    Layer the Phyllo Dough

    Unroll the phyllo dough and lay it flat on a clean surface. Brush a 9x13 inch baking dish with melted butter. Place one sheet of phyllo in the dish and brush it lightly with butter. Repeat this process, layering about 8 sheets of phyllo, brushing each with melted butter.

    Add the Nut Filling

    Spread half of the nut mixture evenly over the layered phyllo. Layer 4 more sheets of phyllo on top, brushing each with butter. Add the remaining nut mixture and top with 8 more sheets of phyllo, brushing each with butter.

    Cut the Baklava

    Using a sharp knife, cut the baklava into diamond or square shapes, making sure to cut all the way through the layers.

    Bake the Baklava

    Bake in the preheated oven for 45-50 minutes, or until the top is golden brown and crisp.

Syrup Preparation

    Make the Syrup

    In a saucepan, combine water, sugar, honey, and vanilla extract. Bring to a boil over medium heat, then reduce to a simmer for about 10 minutes until slightly thickened.

    Pour Syrup over Baklava

    Once the baklava is done baking, remove it from the oven. Immediately pour the warm syrup over the hot baklava, allowing it to soak into the layers. Let it sit for at least 4 hours, preferably overnight, to absorb the syrup.
