Prepare the Olive Mixture
In a mixing bowl, combine the mixed Italian olives, minced garlic, chopped rosemary, chopped thyme, lemon zest, and lemon juice. Drizzle with olive oil, then season with salt and black pepper. Toss everything together until the olives are well-coated.

Preheat the Wood-Fired Oven
Preheat your wood-fired oven to a high temperature, around 400°F (200°C).

Cook the Olives
Place the olive mixture in a cast iron skillet or a suitable oven-safe dish. Transfer the dish to the wood-fired oven and cook for about 10-15 minutes, or until the olives are heated through and fragrant.

Remove the skillet from the oven and let it cool slightly. Serve warm, garnished with additional herbs if desired.
