    Prepare the Base

    In a large skillet, heat olive oil over medium heat. Add chopped onion and sauté until translucent, about 5 minutes.

    Add Garlic and Peppers

    Stir in the minced garlic and chopped red bell pepper. Cook for another 3-4 minutes until softened.

    Cook the Sausage

    Add the Calabrese sausage to the skillet, breaking it up with a spoon. Cook until browned and fully cooked, about 5-7 minutes.

    Add Tomatoes and Spices

    Pour in the crushed tomatoes along with smoked paprika, salt, and black pepper. Stir well and let it simmer for about 10 minutes.

    Poach the Eggs

    Gently crack the eggs into the sauce, spacing them evenly. Cover the skillet and let the eggs poach until the whites are set but the yolks are still runny, about 5-6 minutes.

    Add Fresh Basil and Cheese

    Sprinkle the chopped fresh basil and grated Parmesan cheese over the top before serving.

    Prepare Crostini

    While the shakshuka is cooking, slice a baguette, brush with olive oil, and toast in the oven until golden brown. Serve alongside the shakshuka.
