Prepare the Fries
Preheat the oven to 425°F (220°C). Wash and cut the russet potatoes into thin fries. Toss them in a bowl with olive oil, salt, and pepper. Spread them out in a single layer on a baking sheet.

Bake the Fries
Bake the fries in the preheated oven for 25-30 minutes, flipping halfway through until they are golden brown and crispy. Remove from the oven and sprinkle with grated Parmesan cheese.

Make the Bolognese
In a large skillet over medium heat, add a little olive oil. Sauté the diced onion and minced garlic until translucent. Add the ground beef and cook until browned. Drain excess fat.

Combine and Simmer
Stir in the crushed tomatoes, Italian seasoning, salt, and black pepper. Let the mixture simmer on low heat for 15 minutes, stirring occasionally.

Assemble the Dish
Once the fries are ready, top them with the bolognese mixture and sprinkle shredded mozzarella cheese over the top. Return to the oven for an additional 5-7 minutes, until the cheese is melted and bubbly.

Remove from the oven, garnish with chopped fresh basil, and serve immediately.
