    Prepare the Polenta

    In a saucepan, bring water to a boil. Slowly whisk in cornmeal and reduce heat to low. Cook for about 20 minutes, stirring constantly until thickened. Stir in heavy cream, parmesan cheese, salt, and pepper. Keep warm.

    Cook the Shrimp

    In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant. Add shrimp and cook for 2-3 minutes until they turn pink. Add cherry tomatoes and cook for an additional 2 minutes. Stir in fresh basil and season with salt and black pepper.

    Poach the Eggs

    In a separate pot, bring water to a gentle simmer. Crack each egg into a small bowl, then gently slide it into the simmering water. Poach for about 3-4 minutes until the whites are set but the yolks remain runny. Remove with a slotted spoon and drain on paper towels.

    Assemble the Dish

    To serve, place a generous scoop of creamy parmesan polenta on each plate, top with the garlic shrimp and tomato mixture, and finish with a poached egg on top. Garnish with additional basil if desired.
