    Prepare the Ingredients

    Dice the Yukon Gold potatoes, bell pepper, and onion. Remove the casing from the Italian sausage.

    Cook the Potatoes

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced potatoes and cook for about 10-12 minutes, or until they are golden and tender, stirring occasionally.

    Add Sausage and Vegetables

    Push the potatoes to one side of the skillet. In the empty side, add the Italian sausage and cook, breaking it up with a spatula until browned (about 5-7 minutes). Add the diced bell pepper and onion, mixing everything together. Season with salt and black pepper.

    Poach the Eggs

    While the sausage and vegetables are cooking, bring a small pot of water to a gentle simmer. Crack the eggs into the pot and poach for about 3-4 minutes or until the whites are set and the yolks are still runny.

    Divide the sausage hash among plates, top each serving with a poached egg, and sprinkle with fresh parsley if desired.
