    Prepare the Artichokes

    Begin by trimming the baby artichokes. Cut off the top third of each artichoke and remove the outer leaves until you reach the tender inner leaves. Slice each artichoke in half lengthwise and place in a bowl of water with the juice of half the lemon to prevent browning.

    Heat the Oil

    In a large skillet, heat the extra virgin olive oil over medium-high heat until shimmering.

    Cook the Artichokes

    Drain the artichokes and pat them dry. Add them to the skillet cut-side down. Cook for about 5-7 minutes until the cut sides are golden and crispy.

    Season

    Once crispy, flip the artichokes and season with salt and black pepper. Continue to cook for an additional 3-5 minutes until they are tender and golden brown.

    Finish and Serve

    Remove from heat, squeeze the remaining lemon juice over the artichokes, and toss to coat. Serve warm, drizzled with more extra virgin olive oil if desired.
