Cannoli Preparation

    Make the Cannoli Shells

    In a bowl, combine flour, cocoa powder, sugar, and salt. Add softened butter and mix until crumbly. Stir in the egg and wine (or vinegar) until a dough forms. Wrap in plastic wrap and refrigerate for 30 minutes.

    Roll and Cut the Dough

    On a floured surface, roll out the dough to about 1/8 inch thickness. Cut into circles using a round cutter (about 3 inches in diameter).

    Fry the Cannoli Shells

    Heat oil in a deep pan over medium heat. Wrap each dough circle around a cannoli tube, sealing the edges with a little water. Fry the shells until golden brown, about 2-3 minutes. Remove and drain on paper towels.

    Prepare the Filling

    In a bowl, beat together mascarpone, ricotta, powdered sugar, and vanilla extract until smooth. Fold in mini chocolate chips.

    Fill the Cannoli

    Once the shells are cool, remove them from the tubes. Fill a piping bag with the filling and pipe it into each shell from both ends.

    Garnish and Serve

    Dip the ends of each filled cannoli in chopped pistachios and drizzle with extra chocolate if desired. Serve immediately.
