    Prepare the Hollandaise Sauce

    Melt butter in a saucepan over low heat. In a separate bowl, whisk together egg yolks and lemon juice until thick. Slowly drizzle in melted butter while continuously whisking until sauce thickens. Season with salt and white pepper. Keep warm.

    Toast the Ciabatta

    Preheat your oven to 375°F (190°C). Slice the garlic cloves in half and rub the cut sides on the ciabatta slices. Place the slices on a baking sheet and toast them in the oven for about 5-7 minutes or until golden brown.

    Poach the Eggs

    Bring a pot of water to a gentle simmer. Crack the farm eggs into small bowls. Create a gentle whirlpool in the water and slowly slide the eggs into the center. Poach for about 3-4 minutes for a runny yolk. Remove with a slotted spoon and drain on paper towels.

    Assemble the Dish

    On each toasted ciabatta slice, layer prosciutto, followed by a poached egg. Drizzle generously with hollandaise sauce and serve immediately.
