Prepare the Teriyaki Marinade

Mix the Marinade
In a medium bowl, combine the soy sauce, honey, rice vinegar, sesame oil, minced garlic, and grated ginger. Whisk until well blended.

Thicken the Marinade
In a small bowl, mix the cornstarch and water until smooth. Add this mixture to the marinade and whisk well to combine. Set aside.
Marinate the Salmon

Place the salmon fillets in a shallow dish and pour the teriyaki marinade over them. Make sure the salmon is well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
Cook the Salmon

Preheat the oven
Preheat your oven to 400°F (200°C).

Prepare a baking sheet
Line a baking sheet with parchment paper or a silicone baking mat.

Bake the Salmon
Remove the salmon from the marinade (reserve the marinade) and place the fillets on the prepared baking sheet. Bake in the preheated oven for 12-15 minutes, or until the salmon flakes easily with a fork.

Heat the Marinade
While the salmon is baking, pour the reserved marinade into a small saucepan. Bring it to a boil over medium heat, then reduce to a simmer until it thickens slightly, about 5 minutes.

Once the salmon is cooked, remove it from the oven and drizzle the thickened teriyaki sauce over the fillets. Garnish with chopped green onions and sesame seeds before serving.
