Prepare the Chicken

Cut the chicken breast into thin strips and season with salt and black pepper. Set aside.

Chop the Vegetables

Prepare all the vegetables: slice the bell peppers, carrots, and onion; cut the broccoli into small florets; and rinse the snap peas.

Make the Sauce

In a small bowl, combine soy sauce, sesame oil, honey, cornstarch, and water. Mix well until cornstarch is dissolved. Set aside.

Stir-Fry the Chicken

Heat a large skillet or wok over medium-high heat. Add 1 tablespoon of sesame oil and when hot, add the chicken strips. Stir-fry for 5-7 minutes or until fully cooked. Remove from the skillet and set aside.

Stir-Fry the Vegetables

In the same skillet, add the remaining tablespoon of sesame oil. Add the minced garlic, onions, and sauté for 1-2 minutes until fragrant. Then add bell peppers, broccoli, carrots, and snap peas. Stir-fry for about 5-7 minutes until vegetables are tender-crisp.

Combine Chicken and Sauce

Return the cooked chicken to the skillet with the vegetables. Pour the prepared sauce over the chicken and vegetables, stirring well to combine. Cook for an additional 2-3 minutes until the sauce thickens.

Plate the Dish

Transfer the chicken and vegetable stir-fry to a serving plate. Garnish with chopped green onions and sprinkle with sesame seeds before serving.
