Method

Preparing Fortune Cookies

  1. 1

    Preheat the Oven

Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.

  2. 2

    Mix Egg Whites

In a mixing bowl, whisk the egg whites with the vanilla and almond extracts until frothy.

  3. 3

    Combine Dry Ingredients

In a separate bowl, mix the flour, sugar, and salt until well combined.

  4. 4

    Combine Mixtures

Gradually add the dry mixture to the egg white mixture, stirring until smooth. Add the water and mix until combined.

  5. 5

    Scoop and Shape Cookies

Using a tablespoon, scoop the batter onto the prepared baking sheet, spacing them about 3 inches apart. Flatten each scoop into a circle about 3 inches in diameter.

  6. 6

    Bake Cookies

Bake in the preheated oven for about 8-10 minutes, or until the edges start to turn golden brown.

  7. 7

    Shape Fortune Cookies

Remove the cookies from the oven and quickly work with one at a time. Place a fortune message in the center of each cookie, fold it in half, and then gently bend the edges to create the classic fortune cookie shape. Use a muffin tin to help hold the shape as they cool.

  8. 8

    Cool Cookies

Let the cookies cool completely in the muffin tin.

Chocolate Coating

  1. 9

    Melt Chocolate

In a microwave-safe bowl, combine the dark chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until melted and smooth.

  2. 10

    Dip Cookies

Once the cookies are cool, dip half of each cookie into the melted chocolate, allowing excess chocolate to drip off.

  3. 11

    Add Sprinkles

If desired, sprinkle with sprinkles while the chocolate is still wet.

  4. 12

    Set the Chocolate

Place the dipped cookies on a cooling rack or parchment paper and let the chocolate set completely.
