Preparation
1. Prepare the Shrimp
Rinse the shrimp under cold water and pat dry with paper towels. Set aside.
2. Prepare the Vegetables
Wash and slice the bell pepper, carrot, and onion. Cut the broccoli into small florets and rinse the snow peas. Set all vegetables aside.
3. Mix the Sauce
In a small bowl, combine the soy sauce, minced garlic, minced ginger, sesame oil, salt, and black pepper. Mix well and set aside.

4. Heat the Oil
In a large skillet or wok, heat the vegetable oil over medium-high heat until hot.
5. Stir-Fry the Shrimp
Add the shrimp to the hot skillet and stir-fry for about 2-3 minutes or until they turn pink and are cooked through. Remove the shrimp from the skillet and set aside.
6. Cook the Vegetables
In the same skillet, add the sliced onion, bell pepper, carrot, broccoli, and snow peas. Stir-fry for 4-5 minutes until the vegetables are tender-crisp.
7. Combine Shrimp and Sauce
Return the cooked shrimp to the skillet with the vegetables. Pour the sauce over the mixture and stir well to combine. Cook for an additional 2 minutes to heat through.
8. Serve
Remove from heat and serve the shrimp and vegetable stir-fry over rice or noodles, if desired.
