Prepare the salad base
In a large salad bowl, combine the mixed greens, shredded carrots, cucumber, red bell pepper, green onions, and mandarin oranges.

Sprinkle the chow mein noodles on top of the salad mixture.

Pour the sesame dressing over the salad and toss gently to combine all ingredients.

Transfer the salad to a large serving platter or bowl and serve immediately.

Marinate the chicken
In a large bowl, whisk together soy sauce, honey, minced garlic, grated ginger, and sesame oil. Add the chicken breasts and marinate for at least 30 minutes.
