Method

Preparation of Sauce

  1. 1

    Combine Sauce Ingredients

In a medium bowl, whisk together soy sauce, rice vinegar, hoisin sauce, cornstarch, sesame oil, red pepper flakes, minced garlic, and minced ginger until well combined. Set aside.

Cooking Shrimp and Vegetables

  1. 2

    Heat Oil for Stir-Frying

In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium-high heat until shimmering.

  2. 3

    Cook Shrimp

Add the shrimp to the skillet and stir-fry for about 2-3 minutes, or until they turn pink and are cooked through. Remove the shrimp from the skillet and set aside.

  3. 4

    Stir-Fry Vegetables

In the same skillet, add the diced bell pepper and zucchini. Stir-fry for 2-3 minutes until they are slightly tender. Add the chopped green onions and stir-fry for an additional minute.

Combining the Dish

  1. 5

    Combine Shrimp and Sauce

Return the cooked shrimp to the skillet with the vegetables. Pour the prepared sauce over the mixture and stir to combine. Cook for another 2-3 minutes until the sauce has thickened and everything is heated through.

  2. 6

    Add Peanuts

Remove the skillet from heat and stir in the roasted peanuts. Mix well to ensure the peanuts are evenly distributed.

Serving
