Preparation of Sauce

  1. 1

    Prepare Ingredients

Start by gathering all your ingredients. Mince the garlic cloves, slice the water chestnuts, and dice the zucchini.

  2. 2

    Sauté Garlic

In a medium saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant, being careful not to burn it.

  3. 3

    Add Zucchini and Water Chestnuts

Add the diced zucchini and sliced water chestnuts to the pan. Sauté for another 3-4 minutes until the zucchini is tender.

  4. 4

    Deglaze with White Wine

Pour in the white wine and scrape any bits stuck to the bottom of the pan. Bring to a simmer and allow to cook for 5-7 minutes, reducing the wine slightly.

  5. 5

    Season and Sweeten

Add the crushed dry chili peppers, salt, black pepper, and sugar to the sauce. Stir well and let simmer for an additional 3-5 minutes until the sauce thickens slightly and caramelizes.

  6. 6

    Final Touch

Taste the sauce and adjust seasoning to your preference, adding more salt, pepper, or sugar if needed.
