    Cook the Noodles

    In a large pot of boiling water, add the wide rice noodles and cook according to package instructions until al dente. Drain and set aside.

    Prepare the Sauce

    In a small bowl, whisk together soy sauce, oyster sauce, fish sauce, brown sugar, and sriracha sauce until well combined. Set aside.

    Sauté the Chicken

    In a large skillet or wok over medium-high heat, add a tablespoon of oil. Once hot, add the sliced chicken breast and cook until browned and fully cooked, about 5-7 minutes. Remove the chicken from the skillet and set aside.

    In the same skillet, add a little more oil if needed. Add the sliced bell peppers, julienned carrots, and sliced onion. Stir-fry for about 3-4 minutes until they are tender-crisp.
