Noodle Preparation

    Cook the Noodles

    Bring a pot of water to a boil. Add Chow Mein noodles and cook according to package instructions until al dente, typically about 3-5 minutes. Drain and set aside.

Vegetable and Protein Preparation

    Prepare the Vegetables

    While the noodles are cooking, julienne the carrots, slice the bell pepper, and chop the green onions. Mince the garlic and ginger.

    Cook the Protein (optional)

    In a large skillet or wok, heat 1 tablespoon of oil over medium-high heat. Add the sliced chicken or shrimp and stir-fry until cooked through, about 3-5 minutes. Remove from the skillet and set aside.

Stir-Fry

    Stir-Fry the Vegetables

    In the same skillet, add another tablespoon of oil and add the minced garlic and ginger. Stir-fry for about 30 seconds until fragrant. Add the carrots, bell pepper, and snow peas, and stir-fry for 3-4 minutes until just tender.

    Return the cooked protein to the skillet, and add the drained noodles.

Sauce Preparation

    In a small bowl, mix together the soy sauce, oyster sauce, sesame oil, cornstarch, and water until well combined.

    Pour the sauce over the noodle and vegetable mixture in the skillet. Toss everything together to coat evenly. Cook for an additional 2-3 minutes until the sauce has thickened slightly. Serve hot, garnished with chopped green onions.
