Preheat the Oven
Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

Mix the Batter
In a medium bowl, whisk together the egg whites, granulated sugar, vanilla extract, almond extract, and a pinch of salt until frothy. Gradually add the flour and water, mixing until smooth.

Shape the Cookies
Drop tablespoon-sized amounts of batter onto the prepared baking sheet, spacing them about 3 inches apart. Use a spatula to spread the batter into thin circles.

Bake
Bake in the preheated oven for about 8-10 minutes, or until the edges are lightly golden.

Form the Cookies
Remove the cookies from the oven and let them cool for about 1 minute. While still warm, gently lift each cookie with a spatula and place a fortune paper in the center. Fold the cookie in half and then bend it to form a crescent shape. Place the shaped cookie in a muffin tin to cool completely.

Melt the Chocolate
In a microwave-safe bowl, combine the semi-sweet chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until the chocolate is completely melted and smooth.

Once the cookies are cooled and set, dip half of each fortune cookie into the melted chocolate. Allow any excess chocolate to drip off.

If desired, immediately sprinkle the dipped portion with sprinkles before the chocolate sets.
