Preparation of Vegetables

Prepare the Vegetables
Julienne the carrot, cucumber, and red bell pepper into thin strips. Shred the red cabbage and chop the green onions and fresh cilantro.
Rolling the Spring Rolls

Soften Rice Paper
Fill a shallow dish with warm water. Dip one rice paper wrapper into the water for about 10-15 seconds or until it becomes soft and pliable.

Assemble the Spring Roll
Lay the softened rice paper on a clean, flat surface. Place a small amount of each prepared vegetable in the center of the wrapper. Be careful not to overfill.

Roll the Spring Roll
Fold the sides of the rice paper inward over the filling, then roll from the bottom upwards to create a tight roll. Repeat with the remaining rice paper wrappers and filling.
Making the Dipping Sauce

Combine Sauce Ingredients
In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, honey or agave syrup, and chili flakes to taste until well combined.
Serving

Serve the Spring Rolls
