Preheat Oven
Preheat your oven to 400°F (200°C) and line two baking sheets with parchment paper.

Mix Ingredients
In a mixing bowl, combine the egg whites, vanilla extract, almond extract, and water. Whisk until frothy.

Shape Cookies
Using a tablespoon, drop dollops of batter onto the prepared baking sheets. Spread them into circles about 3 inches wide.

Bake Cookies
Bake the cookies for 5-7 minutes, or until the edges are golden brown.

Shape Fortune Cookies
Remove from the oven and let cool for about 1 minute. Quickly place a fortune inside each cookie, fold them in half, and then place the curved edge over the edge of a cup to shape.
Chocolate Coating

Melt Chocolate
In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until melted and smooth.

Coat Cookies
Dip half of each fortune cookie into the melted chocolate, allowing excess to drip off.

Add Toppings
Sprinkle with sprinkles or crushed nuts while the chocolate is still wet.

Place the coated cookies on a parchment-lined tray and let them set at room temperature or refrigerate until the chocolate hardens.
