1. Preheat the Oven

In a separate bowl, whisk the egg whites until frothy. Add the vanilla extract, almond extract, vegetable oil, and water. Mix until well combined.
4. Combine Ingredients
Gradually add the dry ingredients into the wet mixture, stirring until a smooth batter forms.
Baking
5. Form Cookies
Spoon about a tablespoon of batter onto the prepared baking sheet, spreading it into a thin circle about 3 inches in diameter. Repeat with remaining batter, leaving space between each cookie.
6. Bake Cookies
Bake in the preheated oven for about 8-10 minutes or until the edges are golden brown. Keep a close eye as they can burn quickly.
7. Shape Cookies
Remove the cookies from the oven and let them cool for 1 minute. While still warm, quickly place a fortune slip in the center of each cookie. Fold the cookie in half and pinch the edges to seal, then gently bend the ends to create the traditional fortune cookie shape.
