Prepare the Marinade
In a small bowl, whisk together the soy sauce, sesame oil, minced garlic, grated ginger, maple syrup (or honey), and rice vinegar until well combined. Set aside.

Press the Tofu
Remove the tofu from its packaging and drain any excess liquid. Wrap the tofu block in a clean kitchen towel and place a heavy object on top (like a cast-iron skillet) for about 15-20 minutes to press out the moisture.

Cut the Tofu
Once the tofu is pressed, cut it into bite-sized cubes or slices, depending on your preference.

Marinate the Tofu
Place the cut tofu in a shallow dish and pour the prepared marinade over it. Let it marinate for at least 30 minutes, preferably longer for more flavor.

Coat the Tofu
After marinating, sprinkle cornstarch over the tofu pieces and toss gently to coat each piece evenly.

Cook the Tofu
In a large skillet, heat the cooking oil over medium-high heat. Add the coated tofu pieces and cook for about 5-7 minutes on each side, or until golden brown and crispy. Remove from heat and serve.
