1. Prepare the Tofu
Drain the tofu and press it for about 15-20 minutes to remove excess moisture. Cut it into bite-sized cubes.

In a large pan or wok, heat the vegetable oil over medium-high heat. Add the tofu cubes and cook until golden brown on all sides, about 8-10 minutes. Remove the tofu from the pan and set aside.

In the same pan, add the red curry paste and cook for 1-2 minutes until fragrant. Stir in the coconut milk, vegetable broth, soy sauce, brown sugar, and lime juice. Bring to a simmer.
5. Add the Vegetables
Add the prepared bell pepper, carrot, broccoli, and snap peas to the curry sauce. Cook for about 5-7 minutes until the vegetables are tender but still crisp.
6. Combine with Tofu
Return the cooked tofu to the pan, stirring gently to combine. Cook for an additional 2-3 minutes, allowing the flavors to meld together.

Serve the coconut curry tofu over a bed of cooked jasmine rice. Garnish with fresh basil leaves and a sprinkle of chili flakes for added heat.
