    Prepare the Ingredients

    Slice the chicken breast into bite-sized pieces. Thinly slice the red bell pepper, carrot, and onion. Mince the garlic cloves.

    Cook the Chicken

    In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the sliced chicken and stir-fry for about 5-7 minutes until the chicken is cooked through and no longer pink. Remove the chicken from the skillet and set aside.

    In the same skillet, add the minced garlic and stir-fry for about 30 seconds until fragrant. Then add the sliced onion, bell pepper, and carrot. Stir-fry for about 3-4 minutes until the vegetables are slightly tender but still crisp.

    Return the cooked chicken to the skillet with the vegetables. Add the soy sauce, oyster sauce, fish sauce, sesame oil, and sugar. Stir well to combine all the ingredients and cook for an additional 2-3 minutes until everything is heated through.

    Stir in the cashew nuts and Thai basil leaves. Cook for another minute until the basil is wilted and fragrant.
