Cooking Noodles

Boil Water
In a large pot, bring 8 cups of water to a boil.

Cook Chow Mein Noodles
Once the water is boiling, add 1 pound of chow mein noodles and cook for about 3-5 minutes or until al dente. Stir occasionally to prevent sticking.

Drain Noodles
Once cooked, drain the noodles and rinse them with cold water to stop the cooking process. Set aside.
Stir-Frying Vegetables

Prepare Vegetables
While the noodles are cooking, prepare the vegetables by julienning the carrots, slicing the bell pepper, shredding the cabbage, and chopping the green onions.

Stir-Fry Vegetables
Add the minced garlic and ginger to the hot oil and stir-fry for about 30 seconds until fragrant. Then add the prepared vegetables (carrots, bell pepper, cabbage, and green onions) and stir-fry for 5-7 minutes until the vegetables are tender yet still crisp.
Making Sauce and Combining

Prepare Sauce
In a small bowl, mix together 1 cup of soy sauce, 1 tablespoon of sugar, 1 tablespoon of cornstarch, and 2 tablespoons of water until smooth.

Combine Noodles and Sauce
Add the drained chow mein noodles to the stir-fried vegetables, then pour the sauce over the mixture. Toss everything together to ensure the noodles and vegetables are evenly coated with the sauce.
Serving

Garnish and Serve
Garnish with sesame seeds and chili flakes to taste. Serve warm and enjoy!
