Prepare the Noodles

    Soak the Rice Noodles

    Place the rice noodles in a large bowl and cover them with hot water. Let them soak for about 20-30 minutes until they are soft but still slightly firm.

Prepare the Sauce

    Mix the Sauce Ingredients

    In a small bowl, combine the fish sauce, tamarind paste, brown sugar, and lime juice. Stir well until the sugar dissolves and set aside.

Cook the Protein and Vegetables

    Cook the Shrimp

    In a large skillet or wok, heat a tablespoon of oil over medium-high heat. Add the shrimp and cook until pink and opaque, about 2-3 minutes. Remove from the skillet and set aside.

    Scramble the Eggs

    In the same skillet, add the beaten eggs and scramble until fully cooked. Remove and set aside with the shrimp.

    Sauté Vegetables

    Add a little more oil to the skillet if needed. Sauté the garlic, carrots, and green onions for about 2-3 minutes until they are tender.

Combine Everything

    Add Noodles and Sauce

    Drain the soaked noodles and add them to the skillet with the sautéed vegetables. Pour the sauce over the top and toss everything together to combine.

    Add the cooked shrimp and scrambled eggs back into the skillet. Toss everything together for another 2-3 minutes until heated through.

    Add Bean Sprouts

    Fold in the bean sprouts and cook for an additional minute, just until they are warmed but still crunchy.

Serve

    Serve the Pad Thai hot, garnished with crushed peanuts, fresh cilantro, and lime wedges on the side.
