Method
Prepare the Noodles

Boil Water
In a large pot, bring 5 liters of water to a rolling boil. Add 1 tablespoon of salt to the boiling water.

Cook Noodles
Add 2 kg of chow mein noodles to the boiling water and cook according to package instructions, typically for 5-7 minutes, or until al dente.

Drain Noodles
Once cooked, drain the noodles in a colander and rinse under cold water to stop the cooking process. Set aside.
Prepare the Vegetables

Prep Vegetables
While the noodles are cooking, prepare the vegetables by shredding the cabbage, julienning the carrots, slicing the bell peppers, and slicing the green onions.
Prepare the Sauce

Combine and Cook

Stir-Fry Vegetables
In a large wok or skillet, heat a tablespoon of oil over medium-high heat. Add the prepared vegetables and stir-fry for 4-5 minutes until they are tender but still crisp.

Add Noodles and Sauce
Add the cooked chow mein noodles to the wok with the stir-fried vegetables. Pour the prepared sauce over the mixture and toss everything together to combine well.

Add Protein (optional)
If using, add 500 g of cooked shredded chicken and/or 300 g of shrimp to the noodles and toss everything together until heated through.

Serve
Once everything is well combined and heated through, serve the large chow mein noodles hot. Enjoy!
