Preparation

    Preheat the Oven

    Preheat your oven to 375°F (190°C).

    Prepare the Chicken

    Rinse the whole chickens under cold water and pat them dry with paper towels.

    Season the Chicken

    In a large bowl, mix together olive oil, salt, black pepper, paprika, and garlic powder. Rub this mixture generously all over the chickens, including under the skin.

    Stuff the Chickens

    Slice the lemons in half and place 2 halves inside each chicken along with 2 garlic cloves and a few sprigs of fresh rosemary.

Cooking

    Prepare the Vegetables (Optional)

    If using, chop the carrots, potatoes, and onions into large chunks. Toss them in olive oil and season with salt and pepper.

    Roasting

    Place the chickens on a large roasting pan, breast side up, and surround them with the prepared vegetables (if using). Roast in the preheated oven for about 1.5 to 2 hours, or until the internal temperature reaches 165°F (74°C) and the juices run clear.

    Rest the Chicken

    Once cooked, remove the chickens from the oven and let them rest for 15-20 minutes before carving. This allows the juices to redistribute.

    Carve and Serve

    Carve the chickens into pieces and serve with the roasted vegetables if prepared.
