Marinade

Method

Marinade Preparation

  1. 1

    Prepare the Marinade

In a medium bowl, whisk together soy sauce, brown sugar, rice vinegar, sesame oil, minced garlic, minced ginger, and black pepper until the sugar is dissolved.

Chicken Marination

  1. 2

    Marinate the Chicken

Place the chicken breasts in a large resealable plastic bag or shallow dish. Pour the marinade over the chicken, ensuring it is evenly coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, preferably 2-4 hours for better flavor.

Vegetable Preparation

  1. 3

    Prepare the Vegetables

While the chicken is marinating, wash and slice the bell peppers, zucchini, and red onion. Also, separate the broccoli into florets and set all the vegetables aside.

Grilling

  1. 4

    Preheat the Grill

Preheat your grill to medium-high heat (about 400°F or 200°C).

  2. 5

    Grill the Chicken

Remove the chicken from the marinade and discard any remaining marinade. Grill the chicken for about 6-7 minutes on each side or until fully cooked (internal temperature of 165°F or 75°C).

  3. 6

    Grill the Vegetables

While the chicken is grilling, toss the prepared vegetables in a little olive oil, salt, and pepper. Grill the vegetables for about 5-7 minutes, turning occasionally until they are tender and slightly charred.

Serving

  1. 7

    Serve the Dish

Once the chicken is cooked through and the vegetables are tender, remove them from the grill. Let the chicken rest for a few minutes before slicing. Serve the grilled chicken alongside the vegetables, drizzling any remaining teriyaki marinade over the top if desired.
