    Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper. In a mixing bowl, whisk together the egg whites, vanilla extract, and almond extract until frothy.

    Combine Dry Ingredients

    In a separate bowl, mix the sugar, flour, cornstarch, and salt until well combined. Gradually add this dry mixture to the egg white mixture, alternating with the water, and stir until smooth.

    Shape the Cookies

    Drop a tablespoon of batter onto the prepared baking sheet, spacing the cookies about 3 inches apart. Use the back of a spoon to spread the batter into a thin circle, about 3 inches in diameter.

    Bake in the preheated oven for about 7-9 minutes, or until the edges are golden brown. Keep an eye on them, as they can burn quickly.

    Form the Fortune Cookies

    Remove the cookies from the oven and immediately use a spatula to flip them. Place a fortune slip in the center, then quickly fold the cookie in half and pinch the edges together, creating the traditional fortune cookie shape.
