Preparation of Rice

Cook the Rice
Rinse 1 cup of white or brown rice under cold water until the water runs clear. In a pot, combine the rinsed rice with 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for about 18-20 minutes for white rice or 35-40 minutes for brown rice until the water is absorbed and the rice is tender. Remove from heat and let sit covered for 5 minutes before fluffing with a fork.

Cook the Chicken or Tofu
If using chicken, pound it to an even thickness. Season with salt and pepper. In a skillet, heat 1 tbsp of sesame oil over medium-high heat. Add the chicken and cook for 6-7 minutes per side or until cooked through. Remove from skillet and let rest before slicing. If using tofu, press to remove excess water, cut into cubes, and sauté in the same skillet for 5-7 minutes until golden brown.

Combine and Serve
Add the cooked chicken or tofu back to the skillet with the sautéed vegetables. Pour in the soy sauce, stirring to coat everything evenly. Cook for another 2 minutes to allow flavors to meld. Serve the chicken or tofu mixture over the steamed rice.
