Preparation
- 1
Prepare the Salmon
Preheat your oven to 375°F (190°C). In a small bowl, mix olive oil, soy sauce, sesame oil, minced garlic, and grated ginger. Place the salmon fillet in a baking dish and brush the marinade over the top. Bake for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.
- 2
Chop the Vegetables
While the salmon is baking, wash and chop the mixed greens, cucumber, red bell pepper, carrot, and green onions. Slice the cucumber into thin rounds, dice the red bell pepper, julienne the carrot, and chop the green onions. Place all chopped vegetables in a large bowl.
Dressing
- 3
Make the Dressing
In a small bowl, whisk together rice vinegar, honey, sesame seeds, salt, and black pepper until well combined. Adjust seasoning to taste.
Assembly
- 4
Combine and Serve
Once the salmon is done, let it rest for a few minutes before flaking it into bite-sized pieces. Add the flaked salmon to the bowl of chopped vegetables. Drizzle the dressing over the salad and toss gently to combine. Serve immediately.
