    Chop Vegetables

    Clean and slice the mushrooms, onion, and bell pepper into thin slices. Mince the garlic.

    Sauté Vegetables

    In a skillet over medium heat, add a drizzle of olive oil. Once hot, add the chopped mushrooms, onion, and bell pepper. Sauté for about 5-7 minutes until softened. Add the minced garlic and cook for another 1-2 minutes until fragrant. Season with salt and pepper to taste.

Assembly

    Prepare the Hoagie Rolls

    Slice each hoagie roll lengthwise without cutting all the way through. Spread 1 tablespoon of garlic aioli on the inside of each roll.

    Fill the Rolls

    Distribute the sautéed vegetable mixture evenly between the two hoagie rolls. Place two slices of pepper jack cheese on top of the vegetables in each roll.

Cooking

    Melt the Cheese

    Preheat your oven to 375°F (190°C). Place the filled hoagie rolls on a baking sheet and bake for about 5-10 minutes, or until the cheese is melted and bubbly.

Serving

    Serve Hot

    Remove from the oven, let cool for a minute, and serve the veggie melts hot, optionally garnished with fresh herbs.
