Base Layer

    Prepare the Base Layer

    In a mixing bowl, combine unsweetened cocoa powder, almond flour, maple syrup, melted coconut oil, and salt. Stir until all ingredients are well combined and a sticky dough forms.

    Press the Base Layer

    Line an 8x8 inch baking dish with parchment paper. Press the dough mixture evenly into the bottom of the prepared dish, ensuring it is compact and smooth.

    Set Aside

    Place the baking dish in the refrigerator to set while you prepare the caramel layer.

Caramel Layer

    Blend the Caramel Ingredients

    In a blender or food processor, combine the pitted dates, peanut butter, vanilla extract, and water. Blend until smooth and creamy.

    Spread the Caramel Layer

    Remove the base layer from the refrigerator. Spread the caramel mixture evenly over the base layer, smoothing it out with a spatula.

    Chill Again

    Return the dish to the refrigerator for about 30 minutes to allow the caramel to firm up.

Topping

    Add the Toppings

    Once the caramel layer has set, sprinkle the chopped roasted peanuts evenly over the caramel layer.

    Cut the bars into squares. Serve topped with a generous dollop of whipped cream and a side of diced apples.
