Preparation of Pork Tenderloin

Preheat the Oven
Preheat your oven to 400°F (200°C).

Prepare the Crackers
In a food processor, crush the Saltine crackers into fine crumbs and set aside.

Season the Pork
Season the pork tenderloin with salt and black pepper on all sides.

Dredge the Pork
Coat the pork tenderloin in flour, shaking off any excess, then dip it into the beaten egg, and finally coat it in the crushed Saltine crumbs.

Searing the Pork
In a skillet over medium-high heat, add a little oil and sear the pork tenderloin on all sides until golden brown, about 3-4 minutes per side.

Roasting
Transfer the seared pork tenderloin to a baking dish and roast in the preheated oven for 20-25 minutes, or until the internal temperature reaches 145°F (63°C).

Rest the Pork
Remove the pork from the oven and let it rest for 5-10 minutes before slicing.

Prepare the Buns
While the pork is resting, slice the brioche buns in half and toast them lightly if desired.

Assemble the Sandwiches
Place a leaf of lettuce on the bottom half of each bun, followed by a slice of tomato. Then, lay a few slices of the sliced pork tenderloin on top.

Add Cheese
Add two slices of American cheese on top of the pork.

Add Condiments
Spread mayonnaise on the top half of the buns and place them on top of the assembled sandwiches.

Serve
Serve the sandwiches immediately while hot.
