Fish Fillet Preparation

Prepare the Breading
In a mixing bowl, combine flour, cornstarch, baking powder, salt, and black pepper. Mix well.

Bread the Cod
Dip each cod fillet first into the wet mixture, then coat in the flour mixture, pressing gently to adhere.
Frying the Fish

Heat the Oil
In a large frying pan or deep fryer, heat vegetable oil over medium-high heat until hot (about 350°F/175°C).

Fry the Cod
Carefully place the breaded cod fillets into the hot oil. Fry until golden brown and cooked through, approximately 4-5 minutes on each side.

Drain the Fish
Once cooked, transfer the fillets to a paper towel-lined plate to drain excess oil.
Tartar Sauce Preparation

Mix the Sauce
In a small bowl, combine mayonnaise, dill pickle relish, lemon juice, capers, salt, and black pepper. Stir until smooth and well blended.
Coleslaw Preparation

In a large bowl, combine shredded cabbage, shredded carrot, mayonnaise, apple cider vinegar, sugar, salt, and black pepper.

Mix the Coleslaw
Toss the ingredients together until everything is evenly coated. Refrigerate for at least 15 minutes to allow flavors to meld.

Toast the Buns
Lightly toast the brioche buns until golden brown.

Assemble the Sandwich
Place a fried cod fillet on the bottom half of each bun. Top with a slice of American cheese, followed by a generous portion of coleslaw. Spread tartar sauce on the top half of the bun and place it on top to complete the sandwich.
