Method

Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 425°F (220°C). Grease four ramekins with butter and dust with cocoa powder to prevent sticking.

  2. 2

    Melt Butter and Chocolate

In a microwave-safe bowl, combine the unsalted butter and semi-sweet chocolate chips. Microwave in 30-second intervals, stirring in between until melted and smooth.

  3. 3

    Mix Eggs and Sugar

In a separate mixing bowl, whisk together the eggs, egg yolks, and granulated sugar until the mixture is thick and pale in color.

  4. 4

    Combine Mixtures

Slowly pour the melted chocolate mixture into the egg mixture, whisking continuously until well combined.

  5. 5

    Add Dry Ingredients

Sift in the all-purpose flour, vanilla extract, and a pinch of salt. Gently fold the dry ingredients into the wet mixture until just combined.

  6. 6

    Fill Ramekins

Divide the batter evenly among the prepared ramekins, filling them about 3/4 full.

  7. 7

    Bake

Place the ramekins on a baking tray and bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center remains soft.

  8. 8

    Cool and Serve

Remove from the oven and let cool for 1 minute. Carefully invert each ramekin onto a plate. Serve immediately with a scoop of vanilla ice cream.
