Preparation of Cauliflower Bites

Prepare the Cauliflower
Remove the leaves from the cauliflower head and cut it into bite-sized florets.

Make the Batter
In a large bowl, combine the all-purpose flour, cornstarch, baking powder, garlic powder, onion powder, cayenne pepper, and salt. Gradually whisk in the water until the mixture is smooth and well combined.

Preheat the Oil
In a deep saucepan or fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Coat the Cauliflower
Dip each cauliflower floret into the batter, ensuring it is fully coated.
Cooking

Fry the Cauliflower Bites
Carefully add the battered cauliflower florets to the hot oil, in batches if necessary, and fry for about 5-7 minutes or until golden brown and crispy. Remove them with a slotted spoon and place them on a paper towel-lined plate to drain excess oil.

Toss in Buffalo Sauce
In a large bowl, combine the fried cauliflower bites with the buffalo sauce. Toss until all pieces are well coated.

In a medium bowl, mix together the mayonnaise, sour cream, crumbled blue cheese, lemon juice, garlic powder, salt, and black pepper until smooth.

Cover and refrigerate the dressing for at least 30 minutes before serving to allow the flavors to meld.
