Panko Crusted Pickle Chips

    Prepare the Pickle Chips

    Preheat your oven to 425°F (220°C). Set up a breading station by placing flour, beaten eggs, and panko breadcrumbs in three separate shallow dishes.

    Bread the Pickle Chips

    Dip each pickle chip into the flour, shaking off the excess. Then, dip it into the beaten eggs, and finally coat it in panko breadcrumbs. Make sure each chip is well coated.

    Fry the Pickle Chips

    In a large skillet, heat vegetable oil over medium heat. Add the coated pickle chips in batches, frying until golden brown and crispy, about 2-3 minutes per side. Remove and drain on paper towels. Season with salt and pepper.

    On a large serving platter, start by layering the fried saltines as the base for your nachos.
