Preparing the Brisket

Cook the Brisket
Preheat your oven to 300°F (150°C). Rub the beef brisket with salt and pepper. Place it in a roasting pan and cover it tightly with aluminum foil. Roast in the oven for 3-4 hours or until tender.

Slice the Onions
Peel and slice the onions into thin rings.

Caramelize the Onions
In a large skillet over medium heat, melt 1 tablespoon of butter. Add the sliced onions and cook, stirring occasionally, for about 20 minutes or until they are golden brown and caramelized. Remove from heat.

Butter one side of each slice of sourdough bread.

Once the melts are done, remove them from the skillet, slice in half, and serve hot.
