Method

Preparation

  1. 1

    Prepare the Vegetables

Dice the red bell pepper, green bell pepper, and red onion into small pieces. Chop the fresh cilantro and set aside.

  2. 2

    Prepare the Avocado

Cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash it lightly with a fork and squeeze the lime juice over it to prevent browning.

Cooking

  1. 3

    Heat the Beans

In a small saucepan, heat the canned black beans over medium heat. Add ground cumin, chili powder, salt, and black pepper to taste. Stir occasionally until heated through, about 5 minutes.

  2. 4

    Warm the Tortillas

In a dry skillet over medium heat, warm each flour tortilla for about 30 seconds on each side until soft and pliable.

Assembly

  1. 5

    Assemble the Burrito

On each tortilla, layer 1/4 cup of cooked brown rice, 1/4 cup of seasoned black beans, diced bell peppers, red onion, and a sprinkle of chopped cilantro. Add a spoonful of mashed avocado on top.

  2. 6

    Wrap the Burrito

Fold in the sides of the tortilla and roll it tightly from the bottom to the top. Ensure all fillings are secured inside.

Serving

  1. 7

    Serve

Cut the burrito in half and serve with optional toppings like sour cream, shredded cheese, and salsa on the side.
