Pickled Vegetables

    Prepare the Pickling Solution

    In a medium saucepan, combine white vinegar, water, sugar, and salt. Bring to a simmer over medium heat, stirring until the sugar and salt dissolve.

    Pickle the Vegetables

    Add sliced carrots and radishes to the simmering pickling solution. Remove from heat and let the vegetables steep for at least 30 minutes. Once cooled, transfer to a jar and refrigerate until ready to use.

Telera Torta Assembly

    Prepare the Eggs

    In a skillet, heat cooking oil over medium heat. Crack the eggs into the skillet and season with salt and black pepper. Cook to your desired doneness (sunny side up, over-easy, etc.). Remove from heat.

    Toast the Telera Rolls

    Slice the telera rolls in half and toast them lightly in a toaster or on a skillet until golden brown.

    Assemble the Torta

    Spread a generous layer of refried beans on the bottom half of each toasted roll. Top with slices of avocado, crumbled queso fresco, and the cooked eggs. Add a few pieces of pickled vegetables on top, then close each torta with the top half of the roll.

    Serve the Telera Tortas warm, and enjoy!
