Chilaquiles Preparation

    Fry the Tortilla Chips

    In a large skillet, heat the vegetable oil over medium-high heat. Once hot, add the tortilla chips in batches and fry until golden and crispy, about 2-3 minutes per batch. Remove with a slotted spoon and drain on paper towels. Season with salt to taste.

    Combine with Salsa

    In a large mixing bowl, combine the fried tortilla chips with the red salsa. Toss gently until the chips are evenly coated, being careful not to break them.

Eggs and Serving

    Fry the Eggs

    In the same skillet, reduce the heat to medium and add a little more oil if necessary. Crack the eggs into the skillet and fry until the whites are set and the yolks are cooked to your desired doneness, about 2-4 minutes.

    Assemble the Chilaquiles

    On a serving plate, place a generous portion of the chilaquiles. Top with the fried eggs, crumbled queso fresco, fresh cilantro, avocado slices, and a dollop of sour cream. Serve with lime wedges on the side.
