Appetizer: Tomato Basil Bruschetta

Main Course: Grilled Chicken Salad

Method

Appetizer: Tomato Basil Bruschetta

  1. 1

    Prepare the Tomato Mixture

Dice the fresh tomatoes and place them in a bowl. Chop the basil leaves and add them to the tomatoes.

  2. 2

    Add Seasoning

Mince the garlic cloves and add them to the tomato-basil mixture. Drizzle with olive oil and balsamic vinegar. Season with salt and black pepper to taste. Mix well.

  3. 3

    Toast the Baguette

Preheat the oven to 400°F (200°C). Slice the baguette into 1/2 inch thick slices and place them on a baking sheet. Bake for about 5-7 minutes until they are golden and crisp.

  4. 4

    Assemble the Bruschetta

Remove the toasted baguette slices from the oven. Spoon the tomato mixture generously onto each slice. Serve immediately.

Main Course: Grilled Chicken Salad

  1. 5

    Grill the Chicken

Preheat a grill or grill pan over medium heat. Season the chicken breasts with salt and black pepper. Grill for about 6-7 minutes on each side or until fully cooked. Remove from heat and let them rest.

  2. 6

    Prepare the Salad

In a large bowl, combine the mixed salad greens, halved cherry tomatoes, sliced cucumber, and thinly sliced red onion.

  3. 7

    Slice the Chicken

Once the chicken has rested, slice it into strips. Add the sliced chicken to the salad.

  4. 8

    Make the Dressing

In a small bowl, whisk together olive oil, lemon juice, salt, and black pepper.

  5. 9

    Combine and Serve

Drizzle the dressing over the salad and toss gently to combine. Top with crumbled feta cheese and serve immediately.
