Prepare the Filling
In a large mixing bowl, combine the shredded chicken, refried beans, cheddar cheese, ground cumin, garlic powder, onion powder, salt, and black pepper. Mix well until all ingredients are thoroughly combined.

Warm the Tortillas
Heat a non-stick skillet over medium heat. Place the corn tortillas in the skillet one at a time for about 15-30 seconds on each side until they are warm and pliable. Remove from the skillet and keep them warm by wrapping them in a clean kitchen towel.

Fill the Tortillas
Take one warm tortilla and place about 2-3 tablespoons of the chicken filling in the center. Roll the tortilla tightly around the filling to form a taquito. Repeat this process with the remaining tortillas and filling.

Fry the Taquitos
In the same skillet, add enough vegetable oil to cover the bottom and heat over medium-high heat. Once hot, carefully place the rolled taquitos seam-side down in the oil. Fry for about 3-4 minutes per side or until golden brown and crispy. Remove from the skillet and place on a plate lined with paper towels to drain excess oil.

Serve the taquitos hot with sour cream, salsa, chopped cilantro, and lime wedges on the side for dipping and squeezing.
